  1. Toor Dal: Rinse, soak 30 min → Pressure cook 3–4 whistles → Temper with ghee, jeera, hing, tomato.
  2. Masoor Dal: Rinse (no soaking) → Pressure cook 2 whistles → Temper with onion, garlic, cumin.
  3. Moong Dhuli: Rinse (no soaking) → Pressure cook 2 whistles → Lightest tadka with ghee & green chilli.
  4. Chana Dal: Rinse, soak 30 min → Pressure cook 3–4 whistles → Temper with onion, tomato, dry mango powder.
  5. Urad Whole (Dal Makhani): Soak overnight → Pressure cook 6–8 whistles → Simmer with butter, cream & tomato on low flame 30–40 min.

  1. Rinse each dal well before cooking.
  2. For Masoor & Moong Dhuli — boil directly in pot with 3x water, turmeric & salt for 15–20 min.
  3. For Toor & Chana Dal — soak 30 min, then boil 30–35 min in covered pot until soft.
  4. For Urad Whole — soak overnight, slow cook 60–90 min on low flame stirring regularly.
  5. Prepare tadka separately and pour over cooked dal. Serve hot.
