  1. Kala Chana Curry: Soak 8 hrs → Pressure cook 4–5 whistles → Prepare dark bhuna masala (onion, tomato, whole spices, chole masala) → Add kala chana + cooking water → Simmer 15 min → Garnish lemon & coriander. Also great dry-roasted as a snack.
  2. Chole (Kabuli Chana): Soak overnight → Pressure cook 3–4 whistles → Cook in thick masala with anardana, amchur, chole masala → Simmer 15 min → Serve with bhature, kulcha or rice.
  3. Lobia Curry (Chawli): Soak 4–6 hrs → Pressure cook 3 whistles → Light onion-tomato tadka with ginger → Add cooked chawli → Simmer 10 min → Quick, high-protein weekday curry.
  4. Matki Curry / Misal: Soak 8 hrs → Pressure cook 4 whistles → Prepare thin spicy gravy with onion, tomato, kolhapuri or misal masala → Add matki → Simmer 10 min → Top with farsan, onion, lemon for Misal Pav.
