Store in a cool, dry place in an airtight container after opening. Keep away from direct sunlight and moisture to preserve freshness.
- Rinse the kala chana well and soak in plenty of water for 6-8 hours (or overnight).
- Drain, then add to a pressure cooker with fresh water in a 1:3 ratio and a pinch of salt.
- Pressure cook on medium heat for 15-18 minutes (about 5-6 whistles), until soft and tender.
- Let the pressure release naturally, then use in your favourite curry or recipe.
- Soak the kala chana for 6-8 hours, then drain and rinse.
- Add to a deep pot with water in a 1:4 ratio and bring to a boil.
- Reduce to a simmer, cover partially, and cook for 45-50 minutes, stirring occasionally.
- Top up with hot water if needed, and cook until the chana is soft to the bite.
- Always soak for best texture — it cuts cooking time and improves digestibility.
- Add a pinch of baking soda while soaking for extra-soft chana.
- Save the soaking water for sprouting instead of cooking, if making sprouts.
- Add salt after cooking for softer results.
