- Rinse the masoor dal 2-3 times until water runs clear. No soaking needed.
- Add to a pressure cooker with water in a 1:3 ratio, a pinch of turmeric and salt.
- Pressure cook on medium heat for 5-7 minutes (about 2-3 whistles) until completely soft.
- Let pressure release, whisk smooth, and finish with a tadka of ghee, cumin and garlic.
- Rinse the dal and add directly to a pot with water in a 1:3.5 ratio — no soaking needed.
- Bring to a boil on high heat, skimming off any foam that appears.
- Reduce to a medium simmer and cook for 15-20 minutes until completely soft and creamy.
- Add turmeric and salt, mix well, then pour a hot tadka of ghee, cumin and red chilli.
- The fastest dal — no soaking, done in 15 minutes on the stovetop. Perfect for busy days.
- For a rich restaurant finish, add a squeeze of lemon and fresh coriander just before serving.
