Small but mighty, matki packs an impressive 24g of protein and 10g of fibre per 100g — making it one of the most nutritious pulses in our entire range.

Storage
Store in a cool, dry place in an airtight container after opening. Keep away from direct sunlight and moisture to preserve freshness.
- Rinse the matki thoroughly and soak in plenty of water for 6-8 hours or overnight.
- Drain and add to a pressure cooker with fresh water in a 1:3 ratio and a pinch of salt.
- Pressure cook on medium heat for 12-15 minutes (about 4-5 whistles) until completely tender.
- Let the pressure release naturally, then use in your curry, usal, or misal.
- Soak the matki for 6-8 hours, then drain and rinse well.
- Add to a deep pot with water in a 1:4 ratio and bring to a rolling boil.
- Reduce heat, cover partially, and simmer for 35-40 minutes, stirring occasionally.
- Top up with hot water as needed and cook until each bean is soft and tender.
- For sprouting: soak 6-8 hrs, drain, tie in a damp cloth and leave for 24-36 hrs until sprouts appear.
- Sprouted matki is even more nutritious — great raw in salads or lightly stir-fried.
- Always soak before cooking — matki is a firm bean and soaking is essential for even cooking.
- For authentic Misal Pav, add a spicy onion-tomato masala and top with farsan and lemon.
