- Rinse the moong dhuli dal 2-3 times until the water runs clear. No soaking needed.
- Add to a pressure cooker with water in a 1:3 ratio, a pinch of turmeric and salt.
- Pressure cook on medium heat for 5-6 minutes (about 2-3 whistles) until soft and smooth.
- Let pressure release naturally, whisk lightly, and finish with a tempering of your choice.
- Rinse the dal thoroughly and add to a pot with water in a 1:3.5 ratio.
- Bring to a boil on high heat, then reduce to a medium simmer.
- Cook uncovered for 15-20 minutes, stirring occasionally, until completely soft.
- Add turmeric and salt, whisk smooth, then temper with ghee, cumin and hing.
- No soaking needed — moong dhuli is the quickest dal to cook.
- Add a pinch of hing (asafoetida) in the tadka for extra digestibility.
- Perfect for babies — cook a little softer with extra water, skip salt for infants.
- For a restaurant-style finish, top with a ghee tadka of cumin, garlic and dried red chilli.
