  2. Drain and add to a pressure cooker with water in a 1:3 ratio, a pinch of turmeric and salt.
  3. Pressure cook on medium heat for 10-12 minutes (about 3-4 whistles) until completely soft.
  4. Let pressure release naturally, mash lightly, then finish with a tadka of ghee, cumin and hing.

  2. Add to a pot with water in a 1:3.5 ratio and bring to a boil.
  3. Reduce to a medium simmer and cook uncovered for 25-30 minutes, stirring occasionally.
  4. Cook until completely soft and creamy, then season and add your preferred tadka.
