Dal Bhaat Organic Unpolished White Peas (Safed Matar) – 450 g are the beloved round white peas that form the heart of Mumbai’s iconic street food — the legendary Matar Chaat, Ragda Patties, and Matar Kulcha. Creamy, hearty, and distinctively earthy in flavour, safed matar cooks into a thick, satisfying gravy that is unlike any other pulse. Grown on certified organic farms and completely unpolished, every grain is chemical-free and naturally wholesome.

Store in a cool, dry place in an airtight container after opening. Keep away from direct sunlight and moisture to preserve freshness.
- Rinse the safed matar and soak in plenty of water for 6-8 hours or overnight until plump.
- Drain and add to a pressure cooker with fresh water in a 1:3 ratio and a pinch of salt.
- Pressure cook on medium heat for 15-18 minutes (about 5-6 whistles) until completely soft.
- Let pressure release naturally, then use as the base for your ragda, curry or chaat.
- Soak safed matar for 6-8 hours, drain and rinse well.
- Add to a deep pot with water in a 1:4 ratio and bring to a full boil.
- Reduce heat, cover partially, and simmer for 45-60 minutes, stirring occasionally.
- Top up with hot water as needed and cook until each pea is completely soft.
- Always soak overnight — safed matar is firm and needs a good soak for even cooking.
- For authentic Ragda, cook until very soft and slightly creamy, then season with cumin and coriander.
- The cooked pea water is full of flavour — use it as the base of your gravy instead of discarding it.
- For Matar Kulcha gravy, add a tangy tamarind chutney and chopped onions — serve hot.
