  1. Rinse chosen rajma variety 2–3 times and soak in water for 8 hours or overnight.
  2. Drain soak water, add fresh water in 1:3.5 ratio with salt and a pinch of turmeric.
  3. Pressure cook 5–6 whistles on medium flame. Rajma should mash easily between fingers when done.
  4. Heat oil in a kadai → Add jeera → Onions till golden → Ginger-garlic paste → Tomato puree → Cook till oil separates.
  5. Add turmeric, coriander powder, red chilli, garam masala → Stir 2 min.
  6. Add cooked rajma with its cooking water → Simmer 15–20 min → Finish with amchur or lemon → Garnish coriander → Serve with basmati rice.

  1. Soak rajma overnight — all 4 varieties need the full 8 hrs to soften properly.
  2. Drain and add to heavy pot with 3.5x water. Bring to boil, then reduce to medium flame.
  3. Cook covered for 60–75 min, stirring every 15–20 min, adding water if needed.
  4. Test: rajma should break easily when pressed. Then add to prepared masala and simmer.

  • Rajma Jammu: Smallest & darkest — most intense flavour. Needs less water in gravy. Best for purists.
  • Rajma Chitra: Speckled, creamiest texture — best for a lighter, milder Rajma Chawal.
  • Rajma Sharmili: Medium-sized, silky — closest to restaurant-style rajma.
  • Red Rajma: Largest variety — bold, hearty, everyday favourite. Good for bulk cooking.
  • Never skip soaking — unsoaked rajma even after pressure cooking can be hard and cause bloating.
  • Cooking water = flavour. Always use it in the gravy, never discard.
